Ethiopia possesses significant agricultural potential, yet it continues to face persistent challenges with food security and malnutrition, especially among children. The dairy sector, a growing industry, presents a unique opportunity through an overlooked resource: liquid whey. Annually, over 10 million liters of liquid whey are produced as a byproduct by dairy processors, yet it remains largely unutilized and treated as waste, leading to environmental pollution. Paradoxically, Ethiopia
spent approximately $109,200 USD in 2022 to import 771 tons of whey.
This concept note proposes an innovative, sustainable, and cost-effective solution: the direct incorporation of liquid whey into Injera, Ethiopia's staple flatbread. This approach bypasses the energy-intensive process of powderization, aiming to enhance the nutritional value of a widely consumed food, reduce environmental waste, and create new economic opportunities, leveraging platforms like the national school feeding program for maximum impact.
The intervention is justified by its direct address of multiple, interconnected challenges:
Goal: To establish a sustainable and scalable model for the utilization of unutilized liquid whey in
the production of nutrient-enriched Injera, thereby improving food security, combating
malnutrition, and reducing environmental pollution in Ethiopia.
Specific Objectives:
1. To develop and standardize a protocol for the safe and effective incorporation of liquid
whey into Injera production.
2. To assess the nutritional composition, sensory attributes, and shelf-life of whey-enriched
Injera.
3. To conduct pilot-scale production and consumer acceptability studies within selected
communities and school feeding programs.
4. To evaluate the economic viability and environmental impact of the liquid whey-Injera
model.
5. To build the capacity of dairy processors, bakers, and stakeholders in liquid whey handling
and utilization.
6. To develop policy recommendations and a dissemination strategy for nationwide adoption.
4. Project Components and Key Activities
The project is structured into five integrated components:
1. Research, Development & Standardization: Characterize whey, optimize pre-treatment,
develop and analyze various Injera formulations, conduct sensory evaluations, and
establish Standard Operating Procedures (SOPs).
2. Pilot-Scale Production & Validation: Establish a pilot production unit, train bakers,
produce at scale for trials, conduct consumer acceptability studies, and monitor the
nutritional impact on school children.
3. Economic & Environmental Impact Assessment: Perform cost-benefit and market
analyses, quantify pollution reduction, and evaluate job creation potential.
4. Capacity Building & Knowledge Transfer: Develop training modules, conduct
workshops and awareness campaigns for stakeholders including dairy processors, bakers,
and communities.
5. Policy Recommendations & Dissemination: Develop policy briefs, engage in
stakeholder dialogues, create a national dissemination strategy, and publish findings.
